Keep it warm in a crockpot
This is one of the best dips for tortilla chips. Take it to a pot luck and everybody will ask you for the recipe. It is really easy to make with only 3 main ingredients.
Here's the recipe:
1/3 cup chopped onion
2 tbsp. butter
1 can Ro-Tel tomatoes
1 can green chiles
1 lb. Montery Jack or Velveeta cheese
1) In a sauce pan, over medium high heat, saute the chopped onions in butter, about 2 minutes
2) Add in the can of green chiles and a can of RO-TEL tomatoes. Bring to a boil, then lower heat to medium low. Simmer for about 5 minutes. Don't cook down all the liquid.
3) Turn off the heat, then stir in the cheese. Stir well until all the ingredients are combined and the cheese is melted.
4) Transfer the salsa into a crockpot to keep it warm.
NOTES:
1) Can be served with diced avocados, diced tomatoes, chopped onions, jalapenos and of course, don't forget the chips.
2) Ro-Tel is a brand of diced tomatoes with chiles. There are other brands other than Ro-Tel.
3) I found out that using Monterey Jack cheese instead of Velveeta gave a better result.

ReplyDeleteI will make this come Friday night-movie night at home for the family. I know its going to be delicious because my mother-in-law's friend brings this to most get togethers. I had asked for the recipe and was told to get the above ingredients and mix it all up, so now I know why it did not turn out good. Now, I have the right steps to do it and will use Monterey Jack instead of velveeta.

ReplyDeleteMaMely, I have all the ingredients on hand for this but could not find the shredded Monterey Jack cheese, they only have the Colby Monterey Jack shredded cheese at superwalmart, so I got the small block Monterey instead. I'll just grate or chop them.
ReplyDeletethat is great that you found a block of Montery Jack cheese. the shredded ones have colby in them, but that is what I use if I can't find them in blocks. the original recipe called for Montery Jack. Yes, you can either chop or grate it. however, grated cheese melts faster.

I wasn't able to do this last Friday, but today we have unexpected compay, my son's classmate wanted to use our printer for their project and his Dad and younger brother was with her, so I decided to make this for them to snack on. We loved it Mamely! We enjoyed it very much and it was my first time to do it. I could improve it next time( should have simmered it longer for the liquid to evaporate mostly), but hey, it was my first time to do it. Her Dad even tried my biko, ( I made it again last Sat.)even if he does not know what it is, and ate the entire slice I gave him.

ReplyDeleteIf you like the sauce to be thick, let most of the liquid cook down. but if you prefer thin sauce you need some of the liquid.
This is also good with sliced green onions on top.
