#265_Ube Mochico Bibingka

Here's another super easy recipe idea...
very similar to the Mochico Bibingka recipe #53 click here,
with the addition of Ube Powder.


Ingredients:
1 lb. glutinous rice flour (mochico is a brand)
1 can coconut cream
1 cup sugar
1 packet ube powder (purple yam powder)
1-1/2 cup water
1 jar macapuno
3 eggs, slightly beaten

Mix everything together then pour in a 9x13 greased baking pan and bake for 1 hour in a 350 degrees oven. If using non-stick or glass pan, bake in 325 degrees oven for 1 hour and 15 minutes.


Let cool before slicing.
ENJOY!!

Note from MaMely:
When I made this batch I reduced the sugar to 1/2 cup, (sometimes I'm concerned about my sugar intake) but it was not a good idea, so I sprinkled some turbinado sugar on top of the baked bibingka and returned it in the oven to broil for a few minutes. I suggest to use the whole cup of sugar and not sprinkle sugar on top.

    i just have 1 quest. can i replace ube powder w/
    grated ube and what shld. i remove or add if i use the grated ube? thank u so much for sharing all your wonderful recipes!

  2. Divine, thank you so much for being a loyal follower to my humble blog. Regarding your question, gosh, I don't know what to tell you bec. I haven't used grated ube in this recipe. but if you want to experiment with it, you can probably use the 1 bag of frozen (thawed) ube without the water as this kind has already been boiled and will no longer expand or rise.
    I had to analyze the ratio of water and and the cassava and ube my friend used in the recipe below. It only has 3/4 cup water.
    You can try that and while baking it you can tell if it needs more liquid, then you can gradually sprinkle some more water on top and continue baking.....
    again I haven't tried doing it this way and this is just a suggestion.
    I'd like to know how this turns out so will you please let me know?

  3. I followed the recipe and it turned out good.one of the dessrt that I made last new year sa church namin..kulang ang isang tray kaya next time I will double it...masarap talaga.perfect sweetness.salamat MaMely for sharing this recipe...Belated Happy new year to u all..God bless...

  5. how many cups the 1lb of flour? Can i use grated ube instead of powder?

  6. This is a very good recipe. I used the regular ube. The frozen and I thawed it and used 1 1/2 cups instead of the ube powder. I also used 2% organic milk. I didn't have the coconut strings from the jar so I used 100% organic coconut shavings and it was very good. Thank you for the recipe.
