#164_Ground Beef 'N Sour Cream Potato Casserole

I tried to scan this recipe but it didn't work well for me so
I just took a picture of it to save me
from typing the whole recipe. (this old lady is getting lazy!)
This is one of the several entries I submitted
to the cook book published by a company
I used to work for many years ago, (click here).

I made this today and doubled the recipe
using 11 x 15 x 2 casserole pan.

This is one of my favorite dishes to make for a big crowd
as the recipe can be doubled easily
and can be assembled ahead of time, refrigerate it,
then pop it in the oven when you need it.
It is also very forgiving kind of dish to make,
so you can't really go wrong with it.

Brown the ground beef with chopped onions.
Spread in a deep baking pan or casserole dish.

Peel and boil potatoes til half way done,
then grate using coarse side of a hand-held grater.
When I do a big batch, a food processor is my best friend.

Spread grated potatoes evenly on top of the meat,
then pour the soup mixture on top of the potatoes.
Sprinkle with grated cheese.

Mix melted butter with the cornflakes
slightly crushing the cornflakes.

Spread cornflakes on top.
Note:
One thing that I do that is not on the recipe book is I cover the casserole with aluminum foil that is sprayed with cooking spray the first 30 minutes of baking, then uncover and continue to bake for another 20 to 30 minutes.

#127_Ground Beef Alfredo 'N Breadsticks

This casserole is super simple and super easy to make
and yet very appetizing.
It is a recycled idea from the
Sweet Potato Alfredo Casserole recipe #99, click here.

It only takes a few ingredients such as ground beef,
veggies, condensed soup, Alfredo sauce, shredded cheese,
and a can of refrigerated bread sticks.
Cooking is a breeze specially when you
have the meat ready like store-bought
rotisserie chicken
Of course you can use any kind of meat
you want or you can even go meatless.

I already have browned ground beef in the freezer ready to use.
I just thawed it out in the microwave.

If using fresh ground beef
here is what you need to do:
1) Brown ground beef with chopped onions in a skillet without any oil, over medium high heat until the meat is no longer pink.
2) Put browned meat in a colander to drain off fat.
3) Spread this mixture in a deep baking dish, about 3 inches high.
4) In a pot over medium heat, combine the veggies, Alfredo sauce and the condensed soup. Season with salt and pepper if desired. Cook until just bubbly.
5) Spread this mixture over the meat.
6) Spread some shredded cheese on top. I prefer pizza blend which is a combination of mozzarella, provolone and romano cheeses, or you can use any kind.

7) Arrange the bread sticks on top of the cheese. You can lay them flat or twist them as you lay them on the cheese.
8) Cover the casserole loosely with aluminum foil.
9) Pop it in a pre-heated 350 degrees oven and bake it for 45 minutes. Take out the aluminum foil and continue to bake for another 15 minutes until the breadsticks are light brown.

This dish is a complete meal in itself
and it is very good in every bite!
Kids love it as well as adults.

NOTE:
1) I usually use store-bought frozen vegetables and I don't need to thaw them out.
suggested vegetable combinations: asparagus, cauliflower, broccoli, green beans, squash
2) If using fresh vegetables, you might want to blanch them first.

#99_Sweet Potato Alfredo Casserole

I sent this picture today to a friend without
any description of it to get her reaction,
then she e-mailed me back and said
"what is the name of this cake?"

It might pass for a cake, but it is not. It is a casserole.
Sweet Potato Alfredo Casserole!
It is an old family recipe that I tweaked to be able
to use sweet potatoes
because I'm entering it to a recipe contest
using potatoes as main ingredient.

This is my third entry (maybe the last one) to the
North Carolina Sweet Potato Commission
where Manang of kusinanimanang
invited me to join. Thanks again, Manang!
It has been fun.

Super easy to make, this casserole is composed of 3 layers:

1st layer: the meat

2 lbs. ground beef
1 medium size onion, chopped

2nd layer: the sauce with veggies

1 jar Alfredo Pasta sauce
1 can condensed cream of mushroom soup
1/2 tub of sour cream
1 bag of frozen vegetable (any kind, although
I used the Vegetable & Asparagus stir fry blend)
1/2 tsp. ground pepper
1 cup shredded mozzarella cheese (or whatever you have)

3rd layer: mashed sweet potato with sour cream

3 lbs. sweet potatoes
1/2 tub of sour cream

1st layer: Meat

Brown ground beef with the chopped onions in a skillet over
medium high heat until the meat are no longer pink.
Put browned meat in a colander to drain off fat.
Spread this mixture in a deep baking dish, about 3 inches high.

Mashed Sweet Potato

Unlike regular potatoes, the sweet potatoes don't need too many
other ingredients such as milk, spices, butter, etc.

All you need to do is boil sweet potatoes until they are fork tender.
Peel and mash the sweet potatoes and stir in the sour cream.
Mix well until smooth. Set aside.

The Sauce

Combine Alfredo pasta sauce, mushroom soup
and the other half of sour cream together
then mix in frozen veggies, and the cheese.
Season with ground pepper.
You don't need to thaw out the frozen veggies.
If you prefer to use fresh veggies,
you might want to blanch them first before
mixing them in with the sauce.

2nd Layer: Sauce/Veggies

Spread the sauce/veggies mixture on top of the meat layer.

3rd Layer: Sweet Mashed Potato

Spread the mashed sweet potato with sour cream
on top of the sauce/veggies.
At this point you can sprinkle some
sliced almonds or pecans (optional)
and pop it in a pre-heated 350 degrees oven
and bake it for 1 hour
and you'll have a nice casserole for dinner.

or
...

Pass some mashed sweet potatoes through a piper.
(I used tip #1 M).

(I made a few of these in little dishes to look like they are pot pies).

To achieve the two-toned effect,
after baking the casserole in the oven for an hour,
put it under the broiler for a few minutes
until some of the ridges of the potatoes are browned.
Keep a good eye on it though because it will burn easily.

This dish is a complete meal in itself
and it is very good in every bite!

Open wide!!!

NOTES:
1) In place of ground beef, you can substitute cooked chicken but use condensed cream of chicken soup.
2) My friend and neighbor, Cora, asked me if she can use tuna fish instead of meat as she doesn't care much for meats. I said "I'm pretty sure you can," because I have a similar recipe that has been in the family using tuna and condensed soups and veggies.
So here's an idea from Cora if you want to give it a try, in place of meat, you can use 4 cans of tuna fish (6 0z. ea), drained well
or 2 cans of salmon (14.75 oz. each) drained well, and condensed cream of mushroom soup.

The winning recipes (click here) have been announced by the Sweet Potato Commission, unfortunately none of yours truly's entries won any prize. I actually don't feel bad because I learned some new things doing the recipes.

#5_ Beef Stew

I fixed some beef stew for my hubby for Sunday dinner. I fixed enough so if someone drops by we can have enough for two. I had some kare-kare which I cooked yesterday for a birthday luncheon. I saved some for me before I took it to the party. I will post the recipe of the kare-kare another time.

This beef stew takes more than 2 hours to cook on top of he stove, but with the slow cooker, you can put everything in the pot and do something else... like go see 2 movies while the stew is cooking.

Ingredients:
2 lbs. beef for stewing, or beef chuck, cut in cubes
1/4 cup flour
1 Tb. Season All ( seasoned salt)
canola oil
5 cups water
10 pickling onions
2 cloves galic, smashed
1 Tb sugar
1 Tb worcestershire sauce
1 tsp paprika
2 bay leaves
Dash of Allspice
Salt and pepper to taste
3 carrots, silced diagonally
5 medium potatoes, peeled and cubed

Slow cooker method:
1. Mix the flour and the Season All. Dredge the cubed beef with the mixture or put the meat and the flour in a paper sack and shake it
2. Heat some oil in a non-stick skillet and brown the meat, few at a time, on all sides. Drain them on paper towel.
3. Put the browned meat in the crock pot along with the rest of the ingredients.
4. Put the lid on and set the temperature on LOW. This will take about 6 hours

Stove top method:
1. Follow procedures 1 and 2
2. Put the browned meats in a large skillet and add water, onions, garlic, sugar, salt and pepper, worcestershire sauce and allspice
3. Put the lid on and simmer for about 2 hours, stirring occasionally to prevent sticking. When meat is tender, add the vegetables and continue to simmer for another 30 minutes or until the potatoes are tender.
4. Discard the bay leaves before serving
ENJOY!!
